Fall camping in Michigan is an amazing experience. The gorgeous colors of the leaves and the heady smell of Autumn make for a memorable experience. For campers enjoy cool nights and clear skies well feeling happy to be snuggling back into their hoodies and jeans.

It’s also a time for pumpkin flavored everything. Last few years has seen a loaf of pumpkin flavor burst onto the scene and were finding it turn up in a surprising places.

Campers have known all along that pumpkin is particularly good for fall camping. We have some recipes you might like to try to take with you on your next camping excursion.

Praline Pumpkin Dessert
this delicious dessert begins with a cake mix, you can choose a yellow cake mix or a spice cake mix, and add to that canned pumpkin, evaporated milk, eggs, sugar, pumpkin pie spice, pecans or walnuts, margarine, and have some whipped cream for topping. It’s much easier to make the pie and will feed a whole group of campers. You could make this ahead and bring it with you when you come camping. Either way, it won’t last long.

Pumpkin Streusel Cookie Bars
This dessert is deceptively easy to make and can be whipped up in about 15 minutes. The base will consist of a packaged sugar cookie mix, butter, and cream cheese. The filling will be made with cream cheese, canned pumpkin, sugar, flour, and pumpkin pie spice. The bars will be sweet and creamy with a crumbly top. So, so good!

Pumpkin Bread Pudding
Bread pudding is always a comfort food in the Fall and this pumpkin flavored version makes it all the more special. You’ll need brown sugar, cinnamon, nutmeg, milk, vanilla, canned pumpkin, eggs, bread cubes, raisins, pecans, and some ice cream to go with it if you’d like. Once baked it will be spongy and sweet but hearty and will go perfectly with a nice hot cup of coffee after dinner.
